Recipe: Coriander cutlet| Kothimbir vadi

Coriander cutlets is a famous Indian snack made out of fresh coriander leaves. Its traditionally a recipe from Indian state Maharashtra. Locally its called Kothimbir vadi (coriander cutlets).

Its so crispy, crunchy and flavorful recipe. Perfect for guests, parties. Perfect for anytime of day- as morning or evening snack and also as a starter during meals.

There are 2 ways you can make it: Deep fried cutlets or shallow fry cutlets. I, being a health conscious person, love to eat this as shallow fry one. Both versions are equally delicious.

Ingredients:
Fresh coriander leaves (finely chopped) 1-2cup
Gram flour 1cup
Rice flour (for crispiness) 2tb
Ginger garlic paste 1tb
Green chilies(finely chopped) 2-3
Asafoetida 1/2tb
Ajwain seeds 1/2tb
Cumin power 1tb
Coriander powder 1tb
Baking soda 1/4tb
Salt
Water
Oil


In a bowl, add all above ingredients except water and oil. Mix ingredients well with spoon or hand. Gently start adding water and simultaneously mix the ingredients to make a dough consistency.

Recipe:

Make a roll of that dough as seen in left photo.

Step 2: Use a steamer pot (preferably with holes) and apply oil on it. Put the roll on top of it and steam for few minutes.
To confirm if its done, put a knife into roll and take it out. Knife should not have any sticky ingredients from roll. Then its done.

Step 3: Cut it into medium thick slices/cutlets.

Step 4: Shallow fry or deep fry the cutlets as per your choice.

Serve the cutlets with sauce/chutneys or green chilies like I always like it.
